The Science
You might think dark roast coffee is more acidic and harder on your stomach - but the science shows something different!
Key findings:
- Dark roast and light roast coffee have the same pH level (around 5, similar to a banana)
- However, dark roast contains higher levels of a compound called N-methylpyridinium (NMP)
- NMP forms during the roasting process
- Research shows NMP helps inhibit stomach acid production
This is why many people find dark roast coffee easier on their stomach than lighter roasts!
